Shiraz Cabernet Sauvignon | 2010

The wine

This wine is made from selected Shiraz and Cabernet Sauvignon grapes, which grew on the Terra-Rosa vineyards on the neighboring Malkia mountain range. The wine was gently cared for and then transferred to French oak barrels for a period of 12 months. With a deep red color and slight shades of a purple glow; a full-body and rich tannins leads to a long and complex taste. This wine is full of flavors of blackberry and violets with a hint of Mediterranean herbs that blend with the shades of the cedar barrel and cloves.

The Harvest

The summer of 2010 was unusually hot and the harvest required a special attention in the treatment of the vineyard as well as precision and patience in choosing when to harvest the grapes. Careful monitoring and understanding of the conditions have led to a concentrated fruit with a rich color, quality, and flavor.
The harvest took place in September in the late hours of the night so the grapes arrived at the winery at low temperatures, preserving their unique flavor and aroma.
 

Area of Cultivation

Cabernet Sauvignon and Shiraz is grown at an elevation of 700 meters in the Upper Galilee. This unique area is characterized by a cold climate, red soil (Terra Rosa) and limestone resulting in the roots of the vine to seek water at a depth amongst a layer of rock, which aids in strengthening the vine.

Cabernet Sauvignon Petit Syrah | 2010

The Wine

In 2010 we picked Cabernet Sauvignon and Petite Syrah grapes grown on basalt soil from select vineyards in the upper and eastern Galilee. The wines are made individually, and then transferred to French and American oak barrels for 12 months in order to give them additional complexity, resulting in a finished product that combines the unique characteristics of the two grapes. The wine is a deep purple color, full bodied with balanced acidity leading to a juicy and pleasant taste. It boasts black cherry and rich raspberry flavors which complement the barrel’s flavors of vanilla and coffee.
